I don’t know about you, but I like to sleep in.
This means that I ensure I’m as organised as possible for my day so I can capitalize on my extra shuteye time.
I do this by streamlining my mornings as much as I can so I can just get up, get dressed and leave. The biggest help in this department is having breakfast ready to go. Something I can grab and eat on my way to work. Preferably with one hand, whilst driving.
Having quick brekkies available is great for everyone. Miss N gets herself up and out the door and even though she always makes time for breakfast, it’s good to know I can have something easy for her ready in case she’s late & rushing for the bus. Miss Z, on the other hand, gets up with the birds and doesn’t do anything until it’s 5 minutes before we have to leave. In this case, grab & go brekkies are fab as she can eat it on the way to school (since most of the time, she wouldn’t be bothered to do so beforehand, like a normal person).
So, here are my 3 favourite Grab & Go Breakfasts. All easy to make, simple to reheat and just plain YUM.
A total copy of Maccas, but that’s why it’s so good. These can be made ahead of time and kept in the fridge or even frozen. In the morning you can do a quick grill in a sandwich press or just pop in the microwave for 1min if you are short on time.
Grab yourself some English muffins, top with bacon, a cooked egg, cheese & spinach (and anything else you feel like adding on). Wrap in baking paper to refrigerate.
My absolute fave quick breakfast. Just like the muffins, these can be refrigerated and then cooked in a sandwich press or the microwave. Mine are super yummy Mexican flavoured however you can do many different combinations.
Grab a flour tortilla, top with scrambled eggs, fried chorizo or refried beans, tomato salsa, cheese & baby spinach. Fold both ends in when you wrap and nothing will fall out.
Berry Yoghurt Pots
As simple as they come. These can be made and stored in the fridge for days. You could probably use any fruit you like, but Berries are always a hit in our house. If you want to add muesli or granola to the top, it’s great, however, you will need to add this just before you eat as it will go soggy if kept in the fridge.
A small glass is all you need, fill 1/3 full with your Berry of choice and top with Greek Yoghurt. That’s it.
Making some grab & go breakfasts on the weekend is a great way to make sure there is always something for everyone. No matter if you get up early or late, run for the bus or drive yourself, you can always eat.
